I thought about adding Turnip to the Leek and potato also some herbs. And what a surprise it's the most tastiest soup I have ever tasted, those blends of herbs and spices were perfect. - 1 Whole Leek sliced
- 2 lb new Potatoes
- 3 Carrots chopped
- 1/2 a large Turnip peeled and diced
- 1/2 Large Onion
- 1 tbls Butter
- 2 Garlic Cloves Crushed
- 1/2 tsp Ground black pepper
- 1/2 tsp Dried Cumin
- 1/2 tsp Dried Basil
- 2 Star Anise
- 3 Dried Veg Stock cubes
- 3 litres Boiling Water
- 3 tbls worsestershire Sauce
- 1 little Shredded Beetroot to Garnish

- Chop the Veg



- Add all the veg to 3 litres boiling water with 2 Star Anise boil then add the veg stock cubes sprinkled in





- Add butter to the pan heat up add the onions fry for 1 minute. Then add the Crushed garlic stir to mix



- Next add the dried Basil, Cumin, black ground pepper mix in fry for a further minute


- Next add the Worestershire sauce mix then add to the soup pan with the veg and Stir in bring to the boil then down to simmer for 40 minutes.




- Stir and the veg it will have softened, you will also need a further 3/4 pints boiling water to add. If you want it smooth and thick add to a blender, but will not all fit in so do 2 halves. Also remove the star Anise it will have all the flavour in the soup.
If you want it chunky just add 1 tbls Corn flour to 2 tbls cold water mix in then add to soup add more if you want it thicker.



- After blending add back to the heat and bring to the boil. Then add to the bowls and Garnish with some shredded Beetroot and Serve.
