  1. Assemble all ingredients.Heat 1 tsp clarified butter in a pan and saute for 2 minutes chopped onion, 2 bay leaves, carrot, potato, tomato,ginger garlic paste and salt to taste.Pressure cook upto 4 whistles with 2 cups water till mushy.
  2. Strain the contents in a strainer.Remove bay leaves..Cool and blend the pulp in a blender or mash with a masher.Strain again to get a smooth thick pulp.Set it to boil adding some more water depending on the thickness.Meanwhile heat 1/2 tsp clarified butter and saute capsicum and green peas.Add it to the boiling soup.Add salt and sugar to taste, black pepper powder and garam masala.
  3. For croutons slice into cubes 4 sliced bread.Heat oil and fry till crisp and golden brown. For healthier option brush oil and bake in a pre-heated oven for 5 minutes.Toss and bake till golden and crisp.Serve healthy tangy hot sweet and sour tomato carrot soup with a tsp of butter,chopped coriander and golden fried croutons or toasted bread in breakfast or as an appetizer before main course.
