- preheat soup pot with two tbsp olive oil
- add garlic and onion cook 5min on medium stirring frequently
- then add mirepox mix of carrot .celery .zucchini .pole beans ..pepper ..chopped herbs... and 1/4c water
- cook on medium low almost totally covered until tender....stirring moderately...about 15 min.
- then add the beef stock..old bay..bay leaf and 1 1/2 c water...bring to boil and simmer 15-20 min. stirring occasionally
- take sausage and pierce once with a fork...microwave covered for 2min on 50%...flip 3min on 70%..cool slightly ...dice and remove casing. add to soup.
- then add beans..tomatoes ...mustard greens....return to boil for 5-10 then simmer(covered but vented) 20-30 on low.
- return pot to boiling ....add pasta(more water if necessary ) return to boil..then simmer (covered )on med for 15min.
- at this point you decide on red pepper..cayenne pepper ...cornstarch ....or more water....all up to you. just top off your bowl with parmesan these and enjoy!
