- Homemade Veg Stock

- 150 g Runner Beans
- 3 whole stalk's of Celery
- 3 large onions
- 4 bulbs of Garlic
- Cauldron cold water once Veg in
- Soup done so add Table Salt or Parmesan Cheese (both)
- 3 large onions for frying and then blitzing
Steps to make Cauliflower Soup
- Add Vegetables - apart from Cauliflowers - too a Cauldron saucepan, add cold tap water too a Third of the top and then bring to the boil and then gently simmer for 4 hours - is good too add Bay leaves (Herb) and some Rosemary Sprigs (Herb) - add more cold tap water if Stock has evaporated - you want too produce as much Veg Stock as possible, even though you may not use it all.
- Allow Vegetable Stock too cool down overnight with the Vegetables in it.
- Put sieve over a very large Mixing Bowl and then put the cooked Vegetables too One side once you have obtained the homemade Vegetable Stock liquid.
- Clean Cauldron saucepan and then boil cold clean tap water - add the stalk roots of the Cauliflowers first and then boil them on the highest hob setting for about 25 minutes and then boil the Cauliflower florets for 5 minutes. Allow to cool within the hot water and then drain the water away.
- Shallow fry chopped onions in the 4 tablespoons of Olive Oil until translucent. Gradually blitz blend the cold cooked Cauliflower with the homemade Vegetable Stock and also fried onions and add each blendings too a large Mixing Bowl. Once all done, stir with a Ladle and then ladle into Plastic Containers with lids. Store in the Fridge or Freezer - freeze most of them.
- Heat up soup in a saucepan etc. and then season with Table Salt or grinded down Coarse Sea Salt, could use Ground Black Pepper or White Pepper and the adding of grated salty Parmesan Cheese or Pecorino (Sheep's Milk Cheese) Cheese seems like a good idea. Enjoy, or maybe enjoy with Cheese on toasts.
