- 1 cup Baby spinach blanched and puréed
- 2 tsp butter
- 1 tsp garlic chopped
- 1 cup onion chopped
- 1 Tbsp butter
- 1 Tbsp refined flour
- 1/2 cup vegetable stock
- 1/2 tsp cumin powder
Steps to make Spinach Soup
- In a pan heat butter, add chopped garlic and stir for few seconds. Add chopped onions and cook on medium flame until translucent. Add spinach purée and cook for 2-3 mins. Add cumin powder and salt and cook for 2-3 mins on low flame
- In a pan heat butter, add refined flour and keep stirring, add vegetable stock and continue stirring to avoid lumps
- Pour this butter flour mix onto the spinach pan and mix all well. Keep cooking on low flame for 4-5 mins, set aside
- Plate and add some cream. Enjoy with some breads
