- Ugu leaves (thinly cut)
- Waterleaf (thinly cut)
- Palm oil
- Seasoning
- Spices
- Onions (cut)
- Ram meat
- Kpomo (cow skin)
- Dried fish
- Crayfish
Steps to make Ugu Soup
- Put palm oil in a clean pot and put on heat source. Add in cut onions. Fry.
- Add pepper mix, seasoning, spices, cut onions and crayfish. Stir and allow to fry.
- Meanwhile, soak in warm water, debone and wash dried fish. Keep aside.
- Cut and wash ram meat (mutton), put in a pot on heat source. Add in cut onions, seasoning and spices.
- Cover pot and allow to cook. When cooked to desired softness, drain from broth and fry in vegetable oil. Keep aside.
- Keep broth for later use.
- Wash and cook kpomo with water and potash (to soften it). You can also use a lot of onions in place of potash. They serve the same purpose here.
- When soft, drain and cut into pieces of desired size. Keep aside.
- Going back to the soup, add in water leaves and kpomo stir and leave for a minute before adding ugu leaves.
- Cover pot and reduce heat. Allow to cook.
- When Ugu is soft, add fried meat and dried fish. Stir well to combine all ingredients. Leave it on heat for a minute or two. Turn off heat source.
- .....and the most exciting and satisfying part is..... serve with your desired swallow, rice, pasta, etc.
