  9. 1/2 tsp turmeric
  10. 1 tbsp coriander seeds

  15. 2 tbsp oil
  16. 2 dry red chillies
  17. 10 curry leaves
  18. 2 tbsp gram flour /besan
  19. 10 mushrooms
  20. 2 carrots
  21. 6 green beans
  22. 6 cauliflower florets
  23. 100 gram cottage cheese
  24. 3 cups vegetable stock
  25. 3 cups coconut milk
  26. 1 tbsp lemon juice
  27. Salt to taste
  28. Topping -
  29. 4 tbsp garlic sliced and fried
  30. 2 onion sliced and fried
  31. 1/2 cup coriander leaves
  32. 1/2 cup spring onion
  33. 1/2 cup roasted peanuts
  34. 8 pieces lemon
  35. 3 green chillies finely chopped

Steps to make Veg. Burmese Khowsuey Soup

  1. Boil water in a pot and add salt and oil to it. When the water starts boiling, add hakka noodles to it and boil it. Make sure that it is not over boiled. When it is boiled perfectly, rinse it with cold water and add little oil. Mix it and keep it.
  2. Add all the ingredients of curry paste in a mixer jar along with little water to make paste. Cut all the veggies required to prepare the curry. Cut the cottage cheese into cubes.
  3. Heat oil in a pot, add curry leaves and dry Red chillies to it. Now add gram flour and prepared curry paste to it and saute it for 5 to 7 minutes on medium heat. Now add prepared vegetables to it. You can take vegetables according to your choice.
  4. Mix everything well and cook on medium heat for 5 to 7 minutes. Now add vegetable stock and salt to it and cook it until half done. Now add cottage cheese, coconut milk and lemon juice to it and cook all the vegetables until they are done but still crunchy. Turn off the heat.
  5. Add the prepared curry to a serving bowl and add boiled noodles to it. Add all the toppings on top.
  6. Veg khowsuey soup is a one pot meal which can be topped with different toppings according to your choice.
