- 1 onion small

- 1/4 cup Tomato ketchup
- 1 eggwhite
- Seasonings
- Salt to taste
- 1/2 tsp Blackpepper
- Slury
- 2-3 tbsp cornflour
- 2-3 tbsp water
Instructions to make Schezwan Soup
- Make stock of chicken with garlic cloves,slice onion,ginger,bayleaf, green chilli,cinnamon,green cadamom & water.when chicken is tender & stock is shiny enough & glazy,stop cooking,strain it & remove bayleaf,cardamom,onion cinnamon.I usually mash garlic in stock as It gives aroma & flavour. Shred the chicken from bones.

- Melt butter,saute mushroom slices & chopped springonion.



- Add shreded chicken & fry.add stock,shredded cabbage,carrot give a boil.then add seasonings & sauces.



- Whisk only eggwhite & add in soup with continuous stirring at boiling point,so that eggwhite cooked quickly.lastly add slury & cook few mins til it thickens to required consistency.

- Sprinkle some sesame seeds at top & drizzle chilli oil.serve hot with crackers & croutons.
